Creativity is key at Nishino, one of Osaka’s top Michelin-starred traditional restaurants, where the owner-chef creates subtle remixes of Japanese cuisine, while retaining a healthy respect for tradition. He studied at Osaka’s triple-starred kaiseki institution, Taian, before deciding to open up his now place in 2018, gaining a star of his own soon after.
At an 8-seat counter, he serves up outstanding Naniwa-style vegetables, thick fillet of bonito glazed in sake soy sauce, and a parade of other delicacies. Seasonal accents such as wasabi buds and cherry blossoms turn these delicious plates into edible works of art.
This level of quality is rarely available for such a reasonable price, making Nishino one of the best value Michelin experiences in the city.
