Restaurant Details

Kappo dining finds its spiritual home in Osaka, and owner-chef Hideto Furuike approaches it with religious reverence and deep respect for the Naniwa spirit — an ancient name for Osaka that now reflects the ethos of prioritizing the guests’ tastes above all.


Furuike acts as much like a host and entertainer as he does a chef. Casual conversations flow seamlessly throughout the evening. Once seated, he’ll introduce dishes crafted with seasonal ingredients, such as oysters and matsutake mushrooms in summer, or pork stew and blowfish sashimi in winter. His chawanmushi, made with sour ume (dried plum), is inspired by the very tree in the Osaka Temmangu Shrine.


The menu is handwritten on a long scroll of white paper, but Furuike takes cues from his conversations with guests over the counter, spontaneously crafting dishes tailored to their preferences. This element of improvisation and personal touch is how he builds his loyal clientele.


Meals typically conclude with claypot rice and vegetables. Even on the way out, Furuike continues to talk with you – this is the way of Osaka.
