The original Sublime is a high-end restaurant concept based on the act of fusion itself. Likewise founded on the concept of “innovative cuisine meets teppanyaki”, Teppanyaki Sublime similarly grounds its cuisine in established principles of French cooking, but simultaneously takes inspiration from Nordic culinary philosophy — all the while bringing these to life on the Japanese teppan grill.
Every meal at Teppanyaki Sublime is a feast for all the senses: a whirlwind of dancing flames and flashing knives accompanied by the mouth-watering aroma of premium ingredients like Japanese spiny lobster and abalone slowly cooking to perfection. But the star of the show at teppanyaki is always the beef, and Teppanyaki Sublime is no exception. Only A5-grade kuroge wagyu beef and Japan’s most famous beef — Kobe beef — is served on its teppan.
Guests have the luxury of choosing between the firmer texture of sirloin or the soft, mouth-melting filet to suit their mood. And perhaps ironically, the restaurant’s signature dish is not teppanyaki, but rather, its Kobe beef consomme shabu-shabu hotpot, which combines a refreshing, clean consomme base with perfectly marbled Kobe beef for a beautiful celebration of texture and taste.
For a restaurant to call itself Sublime might be considered presumptuous, but Sublime has more than earned the right to do so. Its original Azabu-juban outlet has earned itself a Michelin Star not once, not twice, but three times consecutively from 2018 to 2020 — an achievement that is, for lack of a better word, Sublime.
