Inspired by his grandfather’s skill in the kitchen, third-generation chef Taketoshi Kan started his career in Yamaguchi Prefecture, where he trained his craft for four years before moving to Tokyo. With over 40 years of experience, he now oversees cuisine at Kyobashi Basara, a traditional restaurant in Tokyo Square Garden. In Japanese, “basara” means, “as you please”, which is exactly the experience this restaurant offers guests.


High ceilings, private rooms reservable for couples and groups, and dishes unique to Basara create a one-of-a-kind atmosphere for diners. The tomato sukiyaki course, with its balanced acidity and rich umami, is a must-order that can only be enjoyed at Basara. Succulent fried pork cutlets (tonkatsu) and charming boxed dishes highlight some of Japan’s favorite dishes in a relaxed, but classy setting.
