To be a successful kappo chef, one has to master a wide range of cooking styles. The chef at Kappo Hashimoto did just that — as skilled at cutting sashimi as he is manning a charcoal grill.
He puts these skills to use creating kappo meals with a healthy dose of originality. Dishes like squid gratin and fried potato salad feature alongside more conventional offerings. The restaurant is run by a married couple, with the wife coming from a family of fishmongers, so their seafood dishes are also ones to watch out for.
