Restaurant Details

There is an intimacy that comes with dining at the counter in a tempura restaurant, and there is perhaps no better place to experience this than at the Namikidori outlet of Tempura Ginza Onodera. With its warm lighting and cozy interior, it strikes the perfect balance between luxurious and homey.


Tempura should not be intimidating, says head chef Yuya Uchi, who worked 12 years at a revered Japanese restaurant in Tokyo before moving to his current position. This is why the eliminates the distance between himself and the customer as much as possible, so they can better appreciate the craftsmanship and care that goes into the preparation of each dish.


And what craftsmanship it is. The signature dish of the establishment is attempted by few and perfected by even fewer—kuroge wagyu beef tempura. Chef Uchi serves up this delicacy in three different ways, using homemade Japanese pepper sauce, truffle salt, and a mixture of salt and black pepper.


All tempura at Ginza Onodera Namiki-dori is fried in Chef Uchi’s special blend of two types of taihaku white sesame oil, which can only be obtained from untoasted sesame seeds. White sesame oil lacks regular sesame oil’s characteristic smell and taste, letting the innate flavor of the ingredients be conveyed to the diner as directly as possible.


Fresh from the fryer, the tempura is best enjoyed with a glass of champagne, of which personalized recommendations are available from the restaurant’s sommelier.
