Tempura restaurants, like the ubiquitous conveyor belt sushi shops, are ten a penny in Tokyo. True high-quality tempura, however, is trickier to find. Kyobashi Tempura Fukamachi inhabits a different universe altogether from your average street-corner tempura joint.
At this Michelin-starred restaurant, a father-son team works together to provide some of the best fried food available anywhere in Japan. Their combination of premium ingredients and perfect preparation will show you just how good tempura can be. The house-recipe batter is so light that it adds the perfect level of bite to each piece without disturbing the taste of the ingredients. Two separate fryers are used, with the pure sesame seed oil in each kept at different temperatures to suit different ingredients.
Their kakiage tempura bowl is legendary, containing ten different varieties of tempura served on rice. Other specialties include sea urchin wrapped in green shiso (perilla) leaf then fried — a unique dish which contrasts with the textures of the crisp batter and soft flesh perfectly.
To keep your tastebuds fresh, high quality pickled vegetables are served between dishes as an acidic palette cleanser. Each part of their set-course menu will leave you amazed, and excitedly anticipating what brilliant creation they’ll present next.
