To uproot one’s entire life for the love of fish is a measure that some might find excessive, but to Chef Nishi Kenichi, it was a move that was entirely justified.
And with just one taste of his immaculately prepared dishes, guests at his restaurant Chisou Nishi Kenichi might just understand why. After experiencing the freshness and flavor of the fish from Sasue Maeda Fish Shop in Yaizu, one of Shizuoka Prefecture’s most famous ports, Chef Nishi decided to close his Hiroshima restaurant and start a new operation there in 2022.
Thanks to more than 20 years of experience honing his craft across France, Tokyo and Hiroshima, every dish at Chisou Nishi Kenichi is filled with the hallmarks of Chef Nishi’s impeccable skill. For most of his offerings, he applies the Japanese culinary philosophy of subtraction; letting each ingredient speak for itself, relying on fundamental flavors instead of adding unnecessary condiments or seasoning.
Take for instance his signature dish of fresh fish in puff pastry. It’s a masterful blend of textures, contrasting the crunch of golden brown pastry and firm, fresh fish, each one sourced from the same supplier that first convinced him to move to Shizuoka in the first place. Depending on the season, the dish takes on its own character; horse mackerel (aji) in the spring and fall take on a sweeter taste thanks to their diet of sakura shrimp.
As one of the Japan Times’ top Destination Restaurants 2024, dining at Chisou Nishi Kenichi isn’t just about the food, though. With the walls and ceiling painted a calming cobalt blue, introduction to a service is like taking a seat beneath the vast, Shizuoka sky, surrounded on all sides by the rolling seas of Suruga Bay. An interior garden with an open skylight fills the space with an abundance of natural light. In the evenings, the lights dim accordingly, setting the stage for a romantic evening.
