Opening its first store in 1973 and staking its reputation firmly as the first okonomiyaki branch in Japan — and, by extension, the world — Chibo makes an exciting debut in Tokyo’s Yurakucho. This sixth-floor spot in Bic Camera serves up Osaka-style grilled specialties with a thoughtful approach to this Kansai comfort food.
Unlike Hiroshima’s layered approach, where ingredients are stacked and cooked in a precise order, Osaka’s okonomiyaki reflects the city’s vibrant, melting-pot spirit: everything is mixed together in one bowl and then grilled.
Chibo’s okonomiyaki features an original flour mix, yam as a binder, and coarsely chopped domestic cabbage that enhances both sweetness and texture. The batter is whipped until airy and flipped four times on the grill, trapping the air to make it fluffy.
At the Yurakucho branch, the flour-based dishes pack a punch with their bold, go-big-or-go-home creations. Take, for instance, the Dotonboriyaki, a massive cabbage pancake loaded with pork belly, shrimp, squid, beef tendon, konjac and gooey cheese. It’s finished with a generous drizzle of Chibo’s secret okonomiyaki sauce, mayonnaise, aonori seaweed powder and katsuobushi flakes that sway from the heat. Another standout is the Chiboyaki, featuring whole shrimp whose heads peek out from the golden pancake.
Even the space is thoughtfully designed. Plush faux leather sofas and a mature color palette featuring grey tones, exposed brick accents, and mahogany create a more refined dining experience than the typical street food eatery. Yet, the gleaming hot plates at each table maintain the communal feel. Every meal here is shared in good company.
