Apotheose's head chef Kitamura Keita is no stranger to Michelin stars, having received his first one during his stint at Parisian restaurant ERH in 2019. Four years later, he decided it was time to earn another, so he returned to Japan to start Apotheose, his latest culinary venture — and within two years, picked up yet another Michelin star.
Chef Kitamura was raised in Shiga Prefecture, a largely isolated and rural part of Japan. For 19 years, he witnessed firsthand the important role shifting seasons and growth play in human lives.
It is this essence that he tries to capture in his cuisine at Apotheose. It embodies everything about gastronomy that its name suggests — “pinnacle” in French — by marrying the stylistic bastion of French gourmet and the effervescent seasonality of Japanese ingredients.
Every element of the venue has been specially created to align with this vision, from a course menu that changes daily to the Gaudi-inspired interior design and Hokkaido soundscape, captured and curated specifically for the restaurant. Ingredients are sourced from producers who have formed a close relationship with Kitamura, connecting the dots between grower, chef and diner. His omakase course menu exhibits the moment as something to be savored on the plate as well as within memories.
The lounge-like setting features plush chairs and views of Tokyo’s gleaming skyline. Guests are treated as if they are being invited to a friend’s home, within which they enjoy a glimpse at the multifaceted soul of Kitamura’s Michelin-starred cooking.
