Located on the first floor of Hotel Hillarys Akasaka in the upscale Akasaka neighborhood, Akasaka Teppanyaki Fillet takes an unapologetic stance: fun is in, and rigid, stuffy dining is out.


It’s why, despite hosting just six guests at a time in its dimly lit, intimate space, the experience is anything but formal. Instead, it’s a playful yet technique-driven exploration of teppanyaki, told through the artful narratives of head chef Kanaya.


With over 30 years of teppanyaki expertise, Kanaya still bases his menu on teppanyaki tradition but updates it with French, Italian, Japanese and Chinese influences. His menu evolves monthly, guided by the rhythm of the seasons, yet always featuring premium, top-tier ingredients that promise both luxury and creativity.


For instance, at one point, the kitchen spotlit Sendai beef, a highly regarded delicacy graded by the Japan Meat Grading Association. This beef comes from cattle fed on an exclusive diet of rice stalks and barley.


At other times, fresh fish prepared using the Tsumoto method—a traditional blood-draining technique that enhances preservation—is pan-fried until its skin crisps to perfection. Japanese lobster, meanwhile, is expertly grilled and seared, drawing out its natural sweetness in every bite.


It all unfolds in a reservation-only venue. The lively atmosphere flows from the chef to his guests.
