At many of the wagyu beef restaurants in Japan, you’ll find this premium beef presented in Western styles. Not so at Nikukappojou. Here, wagyu beef is present through the distinctly Japanese style of kappo — traditional set-course dining.
Using a bespoke oven, the chefs prepare favorite beef dishes served in a series of small plates over several hours. Some other Japanese classics are reimagined with beef as the main ingredient, such as beef thigh “sushi” rolls, and lean beef uni donburi with crab caviar and sea urchin.
These inventions have earned Nikukappojou a Michelin star, making it undoubtedly one of the top spots to enjoy Japanese beef in a range of familiar and unexpected forms.
