Nagoya is home to an incredibly rich local food culture, but much of it can be off-limits for those on plant-based diets. Thankfully, this class has come to bridge that gap. Learn authentic recipes and cooking techniques, and discover how the region’s staple foods can be vegan and vegetarian without compromising on balance or umami, with a little skill and creativity. Your host will also introduce you to miso, a key ingredient in Japanese cuisine, and demonstrate how to harness its versatility to create four delicious dishes.

- Red miso stew (doteni) with red miso, dashi and sugar (with the option of adding more miso)
- Onigiri filled with hen-of-the-wood mushroom tempura
- Fried tofu “chicken wings”
- Miso katsu sandwich with deep-fried tofu, deep-fried and baked ingredients
Aki, your host, is a seasoned cooking expert with years of experience as an instructor and home chef. After developing a deep passion for Japanese cuisine from a young age and learning the principles of food hygiene while working at a restaurant delicatessen, she now shares her experiences with the world. She holds this class at her home in a northern suburb of Nagoya that can be reached by train from Nagoya Station within less than 30 minutes. Learn from her insights on Japanese home cooking and enjoy a vegan or vegetarian lunch together.

The meeting point is at JR Kasugai Station, a 20-minute train ride from Nagoya Station via the Chuo Line. The cooking studio is located in Kasugai, Nagoya. Detailed instructions will be shared upon booking confirmation. More detailed information and a Google Maps link will be provided upon booking.
