Explore Kyoto’s famous Nishiki Market (Nishiki Ichiba), known as the “Kitchen of Kyoto!” And for good reason, too, as this shopping street has five blocks of vendors selling everything from kitchenware to seasonal produce. It’s a delight for the senses, a place where you can sample before you buy, and even pick up some ready-to-eat foods from stalls or rest your feet at a sit-down restaurant. Nishiki Market began as a wholesale fish market, but has grown into much more ever since the first vendor set up shop in the early 1300s. And it’s not just for tourists, it’s a place where locals also come to browse and decide on ingredients for the day’s dinner.
It is here in Nishiki Market, amid the fast-paced hustle of beckoning vendors, that we’ll start our food tour and ramen making class. We will stop by at a few different places to pick up the best ingredients for our ramen of the day, then head to the ramen restaurant where we will bring it all together, creating the ultimate bowl of ramen.
