Kanazawa is the gem of Ishikawa Prefecture, famous for its picturesque mountain scenery and fresh seafood straight from the harbor. For this cooking class, you'll dress up in chef's attire and learn the secrets to making nigiri sushi and regional Kanazawa cuisine dishes like jibuni (chicken stew), a local delicacy.


Your instructor – a certified "samurai chef" – will kick off the class by teaching you to make six varieties of nigiri sushi, one of Japan's most representative seafood dishes. Fresh seafood is sourced from nearby Omichou Market, which supplies many of the Michelin-starred restaurants in the area. With these top-notch ingredients and your host’s guidance, expect nothing less than restaurant-quality sushi!


Then, you'll move into making the hearty regional dish “jibuni”, consisting of chicken, mushrooms, and wheat gluten simmered in a sukiyaki-style broth and garnished with freshly grated wasabi. Once you've comfortably settled into the kitchen, elevate your skills further with dashimaki tamago, an omelet with dashi and Kanazawa shoyu, following a recipe from a local Michelin-starred restaurant. Finish the class making miso soup and a couple of appetizers, then sit down to enjoy your well-deserved meal. Refreshments include a glass of Kanzawa plum wine or sake. Juice and snacks will be provided for children.


This class is open to all skill levels, and monitors will display real-time translations so everyone can easily follow along with the chef's explanations. Detailed digital recipes, from how to cook sushi rice to making sushi, will be emailed to you the day before the experience so you can easily recreate them at home.   • Please note that the chefs leading this experience do not speak fluent English, so a real-time translation system will be used for streamlined communication.
