Yama
Creative Cuisine / Fusion Food
The dessert-only kaiseki course at Tokyo’s Michelin-starred Yama introduces new layers of sophisticated sweetness with plates centered on seasonal fruits.
Restaurant Details
Amid the sophisticated shops and restaurants in the urban greenery mecca Shirokane, the upscale Yama stands out with its unique dessert-only kaiseki menu, a rare concept in Japan. Chef Katsumata Koichi’s overflowing creativity has earned Yama one star in the 2025 Michelin Guide for Tokyo, making it the first dessert restaurant to receive this distinction.
Chef Katsumata sources directly from producers across Japan, and the menu changes every two months to bring the season’s choicest fruits and ingredients to the table. Diners will encounter delicate affairs like marinated figs, spring quiche, strawberry mi cuit, lavender ice cream with peach sauce, and mango terrine. Vegetables and herbs are deftly used to draw out different layers of sweetness. The various textures and temperatures are in keeping with the chef’s philosophy of evoking the dips and peaks of the mountains through food.
Incense greets diners at the door, and the six-seat counter is a single slab of marble, ideal for solo diners or wining and dining. The chef’s devotion to antiques is just as boundless, with intricate glassware on display for diners to marvel at.
