Yakiniku Manno’s Tennoji store, located next to Tennoji Station, inherits this passion. The menu is 80 entries deep, with cuts that could only be provided by a restaurant with such close ties to a wholesaler. Through the procurement of distinguished cattle from trusted partners, they’ve created their own brand of kuroge wagyu called the “Premium Queen’s Beef” — a worthy title given to specific wagyu that has met its stringent criteria. This wagyu is lean and has a low melting point, fattened long-term for a rich sweetness.
Unlike most barbecue houses that age meat for weeks or even months, Mannoya stores the meat from mature cattle for just a week, ensuring their wagyu is served at peak freshness within ten days. Central to their philosophy is the meticulous 'Hidden Knife' technique — a painstaking process of making millimeter-sized cuts to unlock the meat’s maximum flavor.
