The ingredients used are chosen meticulously, but never limited to any one particular brand. The beef is always sourced from female cattle that have not yet had calves, the vegetables are home-grown by local farmers, and the charcoal is specially made from Ubame oak.
Differing from others, Chef Ukai serves his beef in the freshest form and prefers not to age it. Due to the consistency of the temperature achieved by the specific charcoal type, the crusty-surfaced steaks ooze rich aroma and tenderness.
