The epic menu naturally centers on sea urchin, with highlights like the classic kaisendon (seafood bowl), featuring plump, golden-hued sea urchin paired with briny, large salmon roe (ikura). As guests delve deeper into the menu, they discover that the place has even perfected the art of stretching the potential of this delicacy.
Almost all of its transnational dishes incorporate uni. An example is the creamy sea urchin gratin. This mild dish is made with soy milk and fresh yuba from Nanae-cho's Katsuta Tofu Shop.
