Located on the chilly shores of Hakodate, a city bordered by the frigid ocean, lies one of Japan’s premier seafood havens: Hakodate Morning Market. This bustling, four-block market opens at 5 am and is a treasure trove of fresh sea dwellings.


Among its many notable spots is Uni Murakami Hakodate, a small yet incredibly popular eatery renowned for serving some of the finest sea urchin in Hokkaido — arguably, all of Japan. Which makes sense, because the restaurant is handled directly by a sea urchin processing company, so it’s an expert when it comes to allowing the flavor of the fish to shine.


The epic menu naturally centers on sea urchin, with highlights like the classic kaisendon (seafood bowl), featuring plump, golden-hued sea urchin paired with briny, large salmon roe (ikura). As guests delve deeper into the menu, they discover that the place has even perfected the art of stretching the potential of this delicacy.


Almost all of its transnational dishes incorporate uni. An example is the creamy sea urchin gratin. This mild dish is made with soy milk and fresh yuba from Nanae-cho's Katsuta Tofu Shop. Then, there is the baked sea urchin that gets baked on its shell or the Japanese-style pizza topped with homemade sea urchin tsukudani. The highly praised sea urchin tempura, with its golden, crispy exterior, is another must-try. Popular among children are the bite-sized uni croquettes, created with soy cream milk, tortoiseshell bean paste, sea urchin and cheese. It’s a creamy perfection that gets the right crunch.
