Michelin-selected Une Immersion opened in late 2023 in residential Hatagaya in Shibuya and has become an in-the-know spot among gourmands and French cuisine lovers.
Owner-chef Hayata Mutsuki runs the restaurant solo from food preparation to service and recommending wine pairings. As a result, Hayata only accepts two groups of guests per service, making Immersion's intimate culinary offerings even more sought after for dates and special occasions.
The 8-plate omakase dinner course is by far the most popular. For Une Immersion’s most notable appetizer, Hayata combines squid and turnips marinated in salt and lime to meticulously craft a white rose symbolizing the restaurant he trained at.
The charcuterie platter includes delectable pate de campagne with beets and confit with steamed lentils. Hayata’s dedication to his craft includes careful sourcing of fresh, high-quality ingredients. Duck is sourced from Chiba Prefecture, while farm-fresh vegetables are carefully selected from Ehime and Nagano.
The close-knit dining experience and the proximity between chef and guests capture the restaurant's ambition: a complete immersion.
