———
For over a decade, Sushidokoro Shigeru has thrived as one of Akebonobashi’s most frequented sushi restaurants. Its tiny L-shaped counter and cozy atmosphere give off a friendly neighborhood vibe that accentuates the luxury of its culinary fare.
Long before receiving his Michelin Bib Gourmand, the owner was a seasoned veteran of the restaurant business, and his expertise is clearly evident in his nigiri. More than 30 years of experience means that the shari (sushi rice) is neither too salty nor too firm, and the seafood is sliced with deft precision.
Sushidokoro Shigeru keeps things simple by only offering two options: a full omakase course and a nigiri sushi set. Rather than offering traditional Edomae sushi toppings like anago (conger eel) and kohada (gizzard shad), the chef focuses on more modern, popular choices of seafood like sea bream, Spanish mackerel, and amberjack. The small sake selection, carefully curated for its mellow flavor profile, tempers the vibrant taste of the sushi.
A short walk from Akebonobashi Station and about a 10-minute train ride from Shinjuku Gyoen National Garden, Sushidokoro Shigeru sees a constant stream of sushi enthusiasts, both travelers from abroad and local regulars. With the massive volume of visitors, reservations are mandatory — apologetically, but understandably, the owner cannot accept walk-in guests.
