The chef at this sushiya, situated very near to the Roppongi Hills shopping and dining complex, has been making quite a name for himself. His excellent technique folds and molds his nigiri to perfection. Expect all of the classic varieties sourced fresh each day, along with some inventive small dishes on the omakase menu. For example, one of the most appealing dishes is the rice and shredded crab, served on a crab shell used as a plate.
The very long and stylish counter can seat more than the average Tokyo sushiya, but you’ll still need to be on the ball with making a reservation here to make sure that you can beat the crowds of people vying for a spot.
