The name “Sheraton” immediately commands an image of luxury and elegance, and Sushi Shirokane Saeki certainly lives up to those expectations.


Set in the basement of the Sheraton Miyako Hotel Tokyo, Sushi Shirokane Saeki is a literal underground sushi restaurant serving some of the finest nigiri in Tokyo. Helmed by and named for Chef Saeki Hiroshi, a household name in his native Osaka and the founder of the famed Sushi Saeki in Ginza, the restaurant’s menu offerings change monthly, ensuring that diners never have the same experience twice.


Thanks to Chef Saeki having shuttered his Osaka restaurant in 2018, the Sheraton Miyako Hotel Tokyo now draws sushi aficionados from around the country, particularly for those who are unable to secure reservations at his Ginza operation. Ise-ebi shabu-shabu is one of the many appetizers on which he built his reputation; the dish has Chef Saeki take Japanese spiny lobster and boil it in dashi stock, infusing the lobster’s natural salty tang with rich kelp and bonito flavor.


The restaurant also offers an optional pairing course to go with its omakase sushi, including a glass of champagne and four servings of some of the country’s finest sake.
