Previously called Sushi Sanpo until January 2024, Sushi Karin is located on a small, quiet street near Nishi-Azabu crossing. The interior of the restaurant has a traditional Japanese atmosphere with modern accents, and cozy counter seating.
The chefs prepare Edomae-style sushi, but add a modern twist to the classic preparation to bring out the best flavor of each fish. Red vinegar is typically used in Edomae sushi, but at Sushi Karin, they combine three types of vinegar to create their own ideal sushi rice. This combination of old and new makes for flavorful dishes that are both delicious and artful.
At Sushi Karin, they select the highest quality fish, vegetables, and other ingredients from the market every morning. In addition to using the best quality materials, they always try to emphasize the flavor of each type of seafood by fusing the traditional techniques of Edomae sushi with contemporary ideas.
