This bright but compact sushiya in Kumamoto offers a real cost-effective way to get a Michelin-starred sushi meal in Japan. Their set menu meals begin with a range of seafood appetizers followed by a series of delicious nigiri. This will include fish from all around the country, giving a broad showcase of top Japanese sushi.
The rice is seasoned with red vinegar in the authentic original style, rather than the white vinegar which was only popularized in the 20th century. The L shaped counter can only seat 8 people, so be sure to reserve early to grab your spot.
