Let’s start — as one should — with the drinks. Not only does Sushi Misuji’s iterations of seasonally rotating sake complement the 170 years of tradition of its nigiri technique, but it also announces this Osaka stalwart’s intention immediately.
Sandwiched between the two narrow streams of Dojima and Tosabori Rivers, and tucked on the second floor of Nakanoshima Festival Tower West, this is a sushi restaurant with its heart in and focus on Edomae sushi — a style of sushi that originated in Edo, an old name for Tokyo, that makes use of fish caught in the waters of Tokyo Bay. Initially founded under the name Misushi in 1855, a few things are kept the same: rice is seasoned with red vinegar that contrasts the natural sweetness of the grain, and the menu is delivered with an aversion to salmon (salmon could not be caught in Tokyo Bay).
Talented sushi chefs imbue the sushi with pride for their work as they gingerly compact the rice for each piece. To keep a business running for so long demands more than technique, it also requires ambition and perseverance; these days, the store continues to depend on purveyors with whom they have built long-standing relationships to source their ingredients.
Even Misuji’s nigiri-forming technique is beautiful, described by the owner as “dance-like.” Sushi transcends mere taste, offering a multi-sensory experience that remains undeniably delicious. By using three separate sushi counters, 19 guests at a time can enjoy the personal experience of watching their chef hand-form and serve sushi. Lunch and takeout services are also available, including a-la-carte options. The private room, mounted on a raised floor, overlooks the idyllic Tosabori River.

Lunch services have a maximum length of 90 minutes, and dinner services 120 minutes.
