Sushi Matsumoto is the only sushi restaurant to receive a Michelin star in all of Kyoto. To add on to its significance, it prepares sushi the Edomae way — a style of sushi making that was born in Tokyo, when it was still known as Edo.
The chef of Sushi Matsumoto developed his skills in the Kanto region and set up shop in Kansai to spread the love for the eastern side of Japan's style of sushi. Leaving out the sugar in the preparation of rice and only using red vinegar instead, the rice cakes here are made up of a mix of new and aged rice to create a unique texture and consistency.
The omakase menu is specifically created to introduce the best of sushi to the guests — presenting light tasting sushi first and then proceeding to offer the heavier ones. It's also possible to request to be served only Nigiri sushi, but there's a special omakase course that adds tsumami (appetizer dishes) prior to the nigiri. Sashimi, soup, and vinegared mackerel are among the dishes for appetizers.
