Founded by the son of a respected Ginza restaurateur, this 8-seat luxury sushi restaurant serves premium Edomae sushi with a focus on perfectly-balanced umami flavors, presented in a warm and welcoming atmosphere.
Entering the restaurant business as a young man, Chef Tetsuhisa Takahashi continued to hone his skills at his family’s high-end traditional establishments, including famous sushiya Ginza Edogin. He was even given the chance to practice his craft in the kitchens of the revered Ginza Onodera series of restaurants. Now, decades on, Sushi Gintomi is the culmination of his family legacy.
Opened in 2018, the restaurant is where Chef Takahashi showcases his talents with luxurious set menus curated with specific drink pairings in mind. Although the traditional pairing is sake — of which Chef Takahashi has a great selection of vintages — you’ll also find a variety of fine wines and spirits to choose from.
A pleasant addition for such a high-caliber sushi restaurant, guests can also enjoy very reasonable — yet very luxurious — lunch course menus. These range from 8-piece samplers, right up to the full omakase (chef’s choice) experience.
