To the south of trendy Shimokitazawa, you’ll find this top-quality 2021 Michelin-starred sushi restaurant, where the story behind the dishes is as important as the preparation itself. The chef is a natural born storyteller who places significance on the provenance of his seafood, so he entertains his guests with the origin stories of his ingredients.
The sushi also does plenty of speaking for itself. The rice is aged and mixed with red vinegar for seasoning, then topped with a range of premium seafood. The knife work makes the skin of the fish almost as ornate as the Prussian blue patterns of the Chinese porcelain plates they rest on. Some inventive combinations also feature on the omakase-only menu, such as sweet potato and sea urchin with soy sauce.
