Sushi Fujinaga takes this obsession to a new level. Their fatty tuna is prepared with microscopic accuracy. No — literally: it’s prepared under a microscope! Every tiny imperfection is removed with tweezers to leave no sinew at all. After that, the fish is scored 25 times on each side to increase the contact area with the palate and maximize flavor.


This scientific approach isn’t just for the sake of theatrics. The head chef is a veritable sushi academic, who has written research pieces of fish biology and the way that it relates to their taste. With this knowledge, he has created some unbeatable plates such as whelk liver with butter and soy sauce, and gizzard shad nigiri.
