Yuba is a popular ingredient out of Japan. The first time you see it, you'll wonder what it is. Then the first time you taste it, you’ll wonder why you’ve not been eating it your whole life!


Basically, it’s the skin that forms on top of soy milk when it curdles to form tofu. I know what you’re thinking: “skin” and “curdle” aren’t among the more appetizing words in the dictionary, but it’s actually delicious! What’s more, it’s a versatile ingredient that can be used for anything from wrapping onigiri rice balls in a sweet and savory casing, to frying as part of a main dish.


Yuba is a signature local ingredient in the town of Nikko, so where better to try it? Yuba Restaurant Sanfirudo is a Nikko cafe-restaurant which serves up high quality yuba in various styles. The set meal for under 2000 yen gets you a range of different tofu skin dishes with stewed wild vegetables and rice.
