Set amongst Ebisu’s burgeoning food scene, a relaxed but stylish newcomer is making all the right moves with its smooth nihachi soba noodles made from a special blend of flours.

Restaurant Details

Soba is a simple man’s food. Made from a precise ratio of buckwheat and occasional wheat flour, kneaded with water, and, when done authentically, hand-cut with a special soba kiri knife.


At Soba Ikkon, a newcomer in Ebisu’s burgeoning food scene, soba’s simplicity is made special. The restaurant leans on familiar, time-honored techniques while offering a fresh take on what makes soba a great dish that has been refined since the Edo period.


Though recently opening its doors in 2024, the restaurant already has its cult dish: the nihachi soba, made from its own blend of flour. Like its name, which means “two and eight” in Japanese, the nihachi soba is created from a 2:8 ratio of wheat flour and buckwheat flour. The noodles are served in a traditional seiro basket. As diners slurp the noodles, they are greeted with a subtle yet delightful aroma that deepens with every bite.


The crowd’s favorite is the bukkake soba — chilled noodles topped with a pour-over sauce. Dipping sauces for their large seiro soba offers six types of dipping sauce options, ranging from classic duck broth to rich sesame or savory beef sukiyaki with Kujo leeks. On weekends, a full lunch menu features tempura and grilled dishes, while the evening menu morphs into a kaiseki-style course, featuring seasonal ingredients and alcohol pairings.


The restaurant has the right personality for frivolity, too. The open kitchen’s energy spills into the dining space, where organic Japanese modern design highlights the beauty of raw wood. Pendant lanterns with crumpled washi-paper textures cast a warm, golden glow. With informed service and the team’s calming presence, it’s no wonder it’s been gaining traction since.
