Shuntei Nakagawa
The combination of Hida-sourced components with the French culinary technique creates an extraordinary cuisine that can be eaten only at this Michelin-starred restaurant.
Restaurant Details
Taking the space of a renovated 100-year-old house is this reputable restaurant in Hida. Even though the interior is made to represent that of a French restaurant, the essence of what it used to be still lingers. The mastermind behind this Japanese-French eatery is Teruyuki Nakagawa, who refined his skills at a French restaurant before setting up his own humble establishment to share the beautiful technique of adding spices to a dish — a culinary skill he learned during his training.
With fresh vegetables and beef from Hida itself, as well as seafood from the Sea of Japan, there’s no denying the freshness of the ingredients at Shuntei Nakagawa. While there are various types of dishes on the menu, the most popular one to try is the teppanyaki, where the chef combines the Japanese food craft with French flavors. Seasonal ingredients are also often used, so keep an eye out for new menu items which pop up every now and then!
