Shoun was awarded one star by the Michelin Guide Okayama 2021. They strive to bring out the intrinsic flavors of the local ingredients, preparing dishes with respect and gratitude for the blessings of nature. For example, seasonal flowers are used to decorate the dishes and let their guests feel the flow of time and the colors of the seasons.
In addition to the seasonal ingredients, Shoun also purchases the rarely distributed "shishi yuzu" (a type of citron) and "green eel" (known as the "phantom eel"). They take the time to sublimate carefully selected ingredients into even more delicious dishes.
Shoun also grows their vegetables, wild plants, and rice, and produces beautiful dishes they are satisfied with. They also use a special method that removes the smell of the seafood and keeps the fish in a delicious state.
