While the original Yokota in Azabu-Juban made its name off of receiving a Michelin star for eight consecutive years for excellence in tempura, many familiar with Tokyo’s gourmet scene are also aware that Yokota has begun to diversify its menu offerings. Many of the restaurant’s offshoot branches specialize not just in tempura, but also in sushi — to great critical acclaim.


One such example is in Shinjuku, where Yokota has established itself in the heart of the city’s most high-traffic areas, just two blocks from Kabukicho's iconic Ichibangai arch and easily accessible from one of the many train stations in the area.


It has since established itself as one of the premier sushi restaurants in the area, making use of ingredients that are purchased from local markets every morning to devise courses of Edomae-style sushi, tempura and other kaiseki staples. These manage to both pay homage to tradition and yet remain strikingly inventive, thanks to the supervision of a head chef who trained at a Michelin-starred restaurant.


As is expected from Yokota, the tempura at the Shinjuku branch is likewise immaculate, with the temperature, ratio of batter and blend of oils all carefully controlled, as well as the timing of which the tempura is fried. This results in the perfect bite, an impeccable balance between the crunch of the batter and the juicy interior within. But the sushi is no less perfect, with each one made in traditional Edomae style, using rice dressed with red vinegar, seaweed from the Ariake Sea, and fish prepared in the manner that's most suitable for it, be it fresh or aged to perfection.


Guests have the opportunity to watch this all come together at the L-shaped nine-seat counter, where the chefs fry tempura and shape nigiri right before guests’ eyes, or retreat instead to one of the restaurant’s many private rooms. There, in the stillness of Yokota, the noise and crowds of Shinjuku fade away, to be replaced by the quiet satisfaction of a gourmet meal prepared by true craftsmen.
