Its organically shaped wooden signage, hand-carved menu plaques and flagstone flooring tell you where Sano Sushi’s heart truly lies.

Located in Shiba Park, near the Tokyo Tower, Sano Sushi is dedicated to reviving the classic charm of traditional sushi shops from the golden era.


Having only opened its doors in 2023, it received a Star in the Michelin Guide Tokyo just two years later. All credit goes to Chef Sano, whose years of hard work and dedication have earned the restaurant its well-deserved Michelin mention in Tokyo.


His sushi rice, slightly tangy and generously portioned, pays homage to the days when sushi was a quick, hearty meal for the working class — designed to fuel and be easily transported. It’s all about appetizers here, too – no drinking snacks, save for a small mamezara (small Japanese plate) of gari (pickled sushi). Butterfly-cut bottan shrimp is incredibly sweet; conger eel is boiled until fluffy and brushed with thick tare sauce; and translucent slices of sumi squid is day-fresh. The highlight is the trio of tuna nigiri sourced from Fujita, one of Japan’s top tuna brokers and the lead supplier for the legendary Sukiyabashi Jiro. This standout dish has become the restaurant’s signature, often rolled together in a hearty makimono (sushi roll).


Despite the chef's credentials, the mood at Sano Sushi is surprisingly relaxed. While he may not speak English, the chef’s warm hospitality will make you feel at home when you snag one of the few coveted counter seats. Plus, the Michelin-starred cuisine speaks more than fluently enough for itself.
