L'Armoise means "mugwort" in French, an ingredient that has been used as a medicinal herb and a charm against evil since ancient times. Hence, the restaurant hopes to help the customers to achieve health and daily happiness.
L'Armoise was listed as a one-star restaurant in the "Michelin Guide Niigata 2020 Special Edition." In just two years since its opening in 2018, the restaurant has become the center of attention in the restaurant scene in Niigata.
Although the restaurant mainly offers French dishes, they utilize locally grown vegetables, meat, and fish. For example, the meat is Echigo beef from Nagaoka and Tsumari pork from Tokamachi, and the fish is fresh local fish from the market. The vegetables they use are pesticide-free and grown by Chef Tanaka's grandmother, or they are local Nagaoka vegetables purchased at a nearby market.
