Chef Teruhito Negishi uses his well-honed culinary abilities to interpret the established practices and theory of Italian cooking, thereby generating a whole new method of preparation which is all his own.

Handpicking the seasonal ingredients himself — including horse and Ezo deer meat, domestic wagyu beef from Miyazaki, Ozaki, and Hokkaido (sourced from famous butcher shops), and matured pork and shorthorn beef from Kagoshima — the chef challenges himself daily to curate the best dishes from supremely juicy charcoal-grilled meat.
