Philippe Mille Tokyo marks the first foray into Japan for the head chef of a well-renowned restaurant in Champagne, France. With him, he brings the full allure of the region, from the elegant concept to the refined dishes that are more like works of art.
Home to over 100 types of sparkling wine from major and famous maisons to small-scale craft houses, Philippe Mille Tokyo cooks dishes that bring out the best flavors of the champagne. Courses are offered, including a Degustation de Champagne option in which dishes are perfectly married with types of champagne, as well as a monthly "By the Glass” menu which has five to six types of champagne every month.
Even though a huge amount of emphasis has been put onto the champagne factor of this restaurant, Philippe Mille's dishes also perfectly lend themselves to Japanese ingredients like Takashima carrots, shiitake mushrooms, and Omi wagyu beef. The dishes prepared here emphasize the deep understanding the chef has for his ingredients, particularly the ones that are sourced locally.
