Chef Ogawa returned to Japan after five years as the sous chef at Ristorante San Dominico in Imola, which has held two Michelin stars for 45 years. Now operating his original concept, Orchestra, in Sangubashi, Ogawa delivers an Italian fine dining experience that capitalizes on the quality of Japan’s best products. The restaurant takes its name from Chef Ogawa’s memories of the music hall near where he began a life-changing apprenticeship as a chef in Emilia-Romagna.
Orchestra prides itself on using Italian techniques, though the restaurant refuses to be limited by any particular region or canon. Premium Japanese ingredients add novelty to the standard ten-course menu, while wines from Champagne and Bourgogne demonstrate the flexibility of Italian fine dining. Diners have their selection of charcoal-grilled main dishes or an upgraded course menu with caviar pasta and wagyu. He has also imported Ristorante San Dominco’s signature raviolo dish, a paper-thin sheet of pasta containing a soft egg yolk and showered with truffle shavings.
The restaurant itself has just eight seats. From the counter, guests can watch the chef as he carefully prepares each course. A non-alcoholic tea pairing re-envisions the marriage of beverages and cuisine for abstinent guests.
