Oden is a winter cure. This much-loved Japanese dish consists of boiling various ingredients in a warm soup. A good bowl should feature a clear dashi that releases curling steam on cold days. The broth must allow the items to retain their textures: chewy for fishcakes, tender for daikon and firm for eggs. Most importantly, no matter how premium, it needs to be nostalgic.
Just one stop from Namba Station in Osaka is Oden Sumiyoshi Shinsaibashi, a sophisticated restaurant curating a kaiseki-style oden course that honors the soul-warming properties of oden while still embracing innovation. The founding owner set out to “spread the charm of oden,” and indeed, he spread it like a gospel.
Oden Sumiyoshi Shinsaibashi elevates oden with a dashi-based broth crafted with care. The broth-making process is inherited from the recently closed 46-year-old Takoyoshi, a highly regarded oden restaurant in Sakai. Each day, the broth is lovingly made by simmering bonito flakes, kelp, dried sardines, aromatic vegetables and chicken bones for six hours to ensure the highest quality flavor.
The multicourse degustation often begins with traditional, seasonal appetizers before progressing to several types of oden. As in most kaiseki venues, the meal closes with a rice dish.
The interiors of Oden Sumiyoshi Shinsaibashi are beautifully designed for a relaxed yet elevated dining experience inspired by oden’s warm and comforting qualities. The space uses counter-style seating to bring guests closer to the chef. For a more intimate experience, there are two private rooms for up to four guests each.
