Simultaneously calling itself “Azabu Juban’s best-kept secret” and “the world’s first guilt-free wagyu beef restaurant,” Niku-Shari Azabu follows in the footsteps of its sister restaurant, the wildly popular Azabu Kuro-Shari. While both are restaurants that aim to make fine Japanese cuisine healthier, Niku-Shari Azabu is a restaurant that offers what it calls “inner beauty niku-kappo.”


What does this mean? A highly popular cuisine style in recent years, niku-kappo is a multi-course style of Japanese cuisine that uses wagyu beef prepared in a number of different ways. Niku-Shari Azabu sets itself apart by using premium wagyu beef that is raised on a strict diet of pesticide-free vegetables and a specially formulated feed free of antibiotics, particularly monensin. The restaurant also abstains from using refined white sugar, artificial sweeteners, chemical seasonings, or other additives. All menus are gluten-, trans fat- and dairy-free, and all eggs are organic, laid by heirloom chickens.


“Be good to your gut” is the motto of the restaurant, but guests at Niku-Shari Azabu are also treating their taste buds. Appropriately for a restaurant that advocates for moderation, Niku-Shari Azabu aims for the best possible balance between lean and fatty meat, and therefore chooses darker kuroge wagyu — beef from the Japanese black cow — between 33 and 50 months of age, which allegedly has a deeper and richer flavor.


The highlight of any course is most definitely the signature charcoal salt-baked Toman beef from Miyazaki Prefecture. A generous portion of Toman wagyu is wrapped in konbu kelp and baked in a salt crust made of of activated charcoal and Mount Fuji lava salt — the latter containing more than 30 types of minerals — which concentrates the flavor of the wagyu and the konbu’s umami. At the end of the process, the chefs smash the oven open, releasing a burst of rising steam — a dramatic opening to the dining experience.


In a style similar to its sister restaurant Azabu Kuro-Shari, the Azabu Juban restaurant simply oozes class. The restaurant is almost entirely black, from walls to floor to ceiling, with dramatic pools of light illuminating each spot at the polished black stone counter. Guests are invited to sink into one of the plush, scarlet seats and watch the magic happen right before their eyes.
