The dishes which he prepares change regularly, but the structure of the meal always stays the same: beginning with appetizers, moving through sashimi and other small dishes, to boiled dishes, and finishing with a seasonal clay rice pot.
The owner goes to great lengths in sourcing fresh ingredients for these dishes, with many brought to Tokyo from the Kansai region where this dining style was born. To try their limited seasonal crab menu, you’ll need to book it at least three days in advance to give the chef ample time to prepare.
