Located inside the Aman Tokyo Hotel — just a stone’s throw from the Imperial Palace — Musashi by Aman is a paragon of the attention to detail which sets premium sushi restaurants apart; chef Hiroyuki Musashi goes to extreme lengths to curate the perfect experience for his guests.


His process begins many months before any dishes are even served, in his very own personal rice fields in Yamanashi Prefecture. Here Chef Musashi plants and tends to his personal rice crop by hand, ensuring that every grain is optimized for the perfect texture.


Utilizing instincts honed over four decades in the trade, he then uses this as his foundation for master crafted Edomae sushi. His seasonally-adjusted omakase course menus use ingredients sourced the very same morning, and are married with elegant sake pairings courtesy of in-house master sommelier Ryu Fujiwara.
