The titular “ace” in the restaurant’s name, Chef Kaneko Daisuke’s commitment to transparency and simple plating has made L'AS enduringly popular for over a decade. To take the burden of choice off the diner, he has chosen to make only one omakase course available at a time, which changes like clockwork every four weeks. Nonetheless, guests can expect three things to remain constant: his signature crispy foie gras sandwiches, impeccable wine pairings, and wonderful stripped-back French cuisine.
