A sprawling port city rich with history and tradition, Hong Kong has the honor of originating some of the world’s most famous and well-loved dishes. Opened in July 2022, and newly Michelin-starred in 2024, Koshikiryori Koki introduces the Hong Kong dining experience to Japan with all of the region’s dishes.
There is no one better for the job than its head chef, Cham Chi Kuong. Known affectionately by his regulars as “Chef Tommy”, Chef Cham started studying the culinary arts at just 18, embarking on an almost 20-year tour of Hong Kong’s best restaurants, including nine years in the kitchen of the Summer Palace at Island Shangri-La.
Coming to Japan at 37 years of age, he then made his way across some of Osaka, Nagoya and Tokyo’s finest eateries, including the vaunted Fook Lam Moon, before becoming head chef of Koshikiryori Koki.
The invented term “koshikiryori” means “Hong Kong-style cuisine” in Japanese. Chef Cham creates the best traditional Hong Kong dishes using Japan’s fresh, high-quality produce. Menu items include traditional Hong Kong favorites like shark fin noodle soup right beside the restaurant’s specialty crispy chicken. Wrap up the exquisite experience with a satisfying Hong Kong-style flaky egg tart, a satisfyingly crunchy and sweet gastronomic experience.
Koshikiryori Koki’s interior is minimalistic yet deeply intimate, the Chinese-style steel kitchen fully visible from the rich wood countertop and tables. Diners can enjoy seeing the omakase courses being made before their eyes, a spectacle in itself.
