The former holder of a Michelin star, this French restaurant near Shimbashi Station has been a favorite among locals since 1987. Chef Miyashiro Kiyoshi — from whose initials the restaurant takes its name — serves traditional French dishes adjusted for contemporary Japanese palates. Every dish is still recognizably French, but given fresh life by the use of Japanese flavorings and ingredients.
Michelin cuisine is typically complex, using unorthodox combinations of ingredients and condiments that challenge the norms, but Chef Miyashiro has made a name for himself by focusing on what he calls an ingredient's "inherent deliciousness". He strips everything down to its essentials, choosing produce, meat and fish of the highest quality, then expertly preparing them in the manner that best suits each one with skills honed over decades of experience.
The merging of Japanese sensibilities with high-class French cooking is clearly a winning formula, as proven by the Michelin star which KM Restaurant held in 2020. Shunning the spotlight, the restaurant has since not received one since, but its cuisine continues to remain top-notch.
