The chef at Kiyo Courage, Kiyokazu Sumida, has worked in France for 10 years. He cherishes the community of farmers, fishermen, and stock breeders, and uses only carefully selected ingredients like organic, farm-fresh vegetables from Yamaguchi prefecture. The chef usually decides the menu according to what he receives from the farmer. The seafood that they use comes from Kurahashi Island in Hiroshima Prefecture.
For lunch, Kiyo Courage offers three kinds of lunch omakase courses, with prices ranging from 3,850 yen to 7,700 yen. They include amuse bouche, appetizer, main dish, vegetable dish, and dessert. For dinner, they also have three kinds of omakase courses, with prices ranging from 7,150 yen to 16,500 yen.
