Always on the lookout for sustainable farming methods to protect the fragile maritime ecosystem, it took 32 years for the Kindai University Fisheries Research Institute to achieve its groundbreaking success: the artificial farming of bluefin tuna, one of the most overfished yet prized species. This technology involves raising fish larvae to adulthood, collecting their eggs and synthetically hatching those eggs to create the next generation.
Though the mechanics behind this method may seem too distant from the dining table, the very same tuna raised by the institute can be savored in Ginza at its eponymous eatery.
The offerings are straightforward yet impeccably executed: restaurant-grade, drink-compatible seafood dishes. The course menu is ceremonial and visually stunning, a refreshing contrast to the sterile, calculated dishes one might expect from a science-backed restaurant. Lavishly decorated Kindai tuna, glossy and stacked into a mound, proves that farm-raised fish tastes just as good as wild-caught. Another dish features Kindai tuna and fresh fish — red sea bream, striped horse mackerel, yellowtail, and amberjack — tossed in a gochujang and soy sauce-based sauce and laced atop a sushi roll.
Located just up from the train station, the space is split into two sections. One features a sleek, sea-themed ambiance with wooden tables and monitors displaying behind-the-scenes footage of Kindai’s groundbreaking fish farming research and lab. The other section is reserved for private dining, offering a more intimate atmosphere for enjoying these sustainable seafood dishes.
