Takaharu Kimeda spent 11 years honing his craft at Ginza Kyubey, one of the foremost training grounds for sushi masters and has always wanted to introduce diners to the world of sushi through his lens.
He’s done exactly that with Sushi Takaharu, an intimate eight-seater sushi-ya situated in Kanda Nishikicho, which recently opened in the summer of 2024. Though relatively new, Sushi Takaharu has quickly become a crowd favorite, primarily because Takaharu is people-savvy: he has hosted notable figures in Japan from his time at Ginza Kyubey, and his humor and fluency in English make him a gracious host, engaging guests in cheerful banter throughout their meals.
Here, the drawcard is his multi-course set menu option, which spans two hours and is rooted in authentic Edomae sushi traditions. Takaharu personally selects the freshest seafood from Toyosu Fish Market every morning, adjusting the vinegar blend and rice flavor to complement the fish and reflect the season. A blend of nigiri and gunkanmaki (a Ginza Kyubey signature), interspersed with seasonal drinking snacks, showcases his mastery.
Guests dine on a counter made from a single piece of 250-year-old Yoshino cypress, with the same wood used for the private room counter. Though Sushi Takaharu is still a young store helmed by a young chef, with its friendly service and stellar sushi, the only way for Sushi Takaharu is up.
